No dairy French toast

It’s Easter! And that means time to remember, be grateful, get together and enjoy the simple things in life. French toast is one of those simple things: a very easy recipe that turns into a real breakfast treat. The perfect alchemy of bread dipped in a mixture of eggs and milk, then fried and drizzled with whatever you fancy truly gives pancakes a run for their money.

French toast is forgiving and inviting. You can’t go wrong with it and you can change the ingredients to accommodate your dietary requirements. And you can add a variety of toppings to make it sweet, healthy, savoury…From syrup and bacon to honey and yogurt, and anything in between. We make ours with coconut milk and gluten-free bread, with a drizzle of maple syrup and soya yogurt for a healthy start to the day. It’s moist, sweet and uncomplicated.

Ingredients (for 4 slices)
1 free-range large egg
70ml coconut milk
2 tbsp brown sugar
maple syrup, for drizzling

Method
1. In a small bowl, whisk the egg, then add the milk and sugar and combine. Set aside.
2. Pour the coconut milk and egg mixture over the bread, soaking each slice for a couple of minutes.
3. Meanwhile, brush a frying pan with a few drops of olive oil and heat over a medium-high heat.
4. Fry each slice until golden brown, then flip to cook the other side. Serve warm with maple syrup.
